Oxtails! Modified Blue Mountain Recipe

HELLO ALL!

This week, I was craving oxtails from my favorite Jamaican restaurant.  However, being on a budget, I had to rethink my last few visits.  There were fewer oxtails in my order and the price had increased.  So, I was determined to try to make some for myself.  I hit up my local international food market, picked up some oxtails at $4.99/lb. and jar of Blue Mountain Oxtail seasoning, and headed home excited about the possibilities of delicious oxtails for dinner.

I was a bit nervous about preparing my own oxtails.  My assumption was that they took all day to prepare but I was pleasantly surprised.  Now, I did decided to marinade overnight, so I didn’t get my oxtails the same day but it only took about 30 minutes to cook.  So, here’s what I did.  I changed up the recipe a bit because I didn’t have all the ingredients and I made a smaller portion but it came out AWESOME!

1lb – Oxtails
½ - Onion
1 – Tomato (diced)
3 stalks – Green Onion
A few dashes of dried Thyme
1 tbsp. – Worcestershire Sauce

I followed the instructions on the bottle including the overnight marinade.  It came out great!  I hope you enjoy.  Here's how my oxtails came out.
