Mrs.Love's Moist Blueberry Banana Muffins


Now, first I must say that I can't take credit for these delicious muffins.  I found the recipe on food.com. They are very easy to make and very moist.  What I love most about them is that you put those overripe bananas to use.

 DebM's Easy Moist Banana Blueberry Muffins  are great but I wanted to make them a little healthier.  So, for the most part I followed this recipe and customized it for my family's palate and nutritional requirements.  Really, I just reduced the amount of sugar, changed the type of oil, and used organic ingredients.

List of DebM's ingredients

Here are my substitutes:

1.  1/3 cup of Raw Sugar instead of white sugar

2.  1/3 cup (maybe a little less) coconut oil was used instead of butter

3.  Wild blueberries from Trader Joe's. 
These blueberries are grown without pesticides. And they are very tiny.  I think this is what makes my muffins so yummy.

4.  Aluminum Free - Baking Powder

5.  Sea Salt

6.  Organic Flour....sometimes I mix white and wheat flour

7.  I add in either pecans or walnuts depending upon what's in the house.

8.  I almost forgot.  I had been making these for months now, but they didn't get super good until I added a half of a banana to the mix.  Try it will 3 1/2 bananas and see if you agree.  It makes them a tad bit more moist and soft.  Not squishy but soft.
